DAL PODI

Paruppu Podi, Kandi Podi, Gun Powder or Dal powder. This south indian staple goes by many names and has many, many recipes. This podi is popular because this is a pantry staple for those days when you have no fresh vegetables to cook. All you need for a quick meal is this podi, rice and ghee. 

Growing up, this was my favourite podi because my dad would lovingly serve me a plate full of paruppu podi sadham (Sadham in tamil is cooked rice) by adding a heaped serving of freshly cooked, steaming hot rice, topping it with a spoonful of ghee and paruppu podi. Later during my adult years, I used to look forward to eating at an "Andhra Mess" restaurant, a small thatched roof place, which served a fantastic 7 course Andhra meal, completely with tableside serving of "gun powder", ghee and avakaya pickle.
